We present an easy take on a drink from the seasonal menu. It's a party-sized pre-mixed that's loaded with the tastes of the holiday season, rendering it excellent for hosting a festive gathering. Reserve the remaining syrup for breakfast cocktails, puddings, or to mix more rounds of the drink.
The Bikini Cocktail
Serves 10 guests
Ingredients for the Clementine Cordial (yields 750ml)
300ml recently pressed clementine juice
200ml fresh lemon juice
500g caster sugar
To make the Premix (makes 850ml, serving 10)
400ml good quality vodka
100ml classic gin
150ml peach-flavored liqueur
200ml clementine syrup (see above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing
Instructions
For the Cordial: Combine the listed items into a saucepan, bring to a simmer, mixing until the sugar dissolves. Next, take off the burner and leave to cool completely. Pour into an sealable bottle, close it keeping it in the refrigerator, it will last for around one month.
For the Batch Mix: Combine every spirits and syrup into one large bottle, let it rest for 60 minutes, then strain best through muslin, making it fully clarified.
When ready to serve: Pour 85ml of your batch mix to a stirring glass packed with ice, and stir gently for one minute to chill. Pour into a cold coupe glass or a similar vessel, top with some cranberries and finish with a light spray of mandarin oil over the top.
